These low-carb cranberry bars are a yummy holiday treat! They are one of my favorite easy keto snacks because they are high in fiber.

These cranberry bars taste like a sweet candy bar but they won’t mess up your blood sugar or kick you out of ketosis. You are going to love this recipe!

One cup of raw cranberries contains 8.3g net carbs. If you are going to be eating just one or two bars, there are a lot less than a cup of cranberries in them. When you pair that with the fiber from almond flour, it lowers the overall carb count a lot.

Cranberries are an excellent source of vitamin C and are really beneficial for bladder health. Coconut oil is also really good for you since it’s high in healthy fats that your body needs to stay in ketosis.

INGREDIENTS:

CRUST-

  • Almond flour
  • Baking soda
  • Cinnamon
  • Sugar substitute
  • Coconut oil
  • Sugar free maple syrup

CRANBERRY FILLING-

  • Fresh cranberries
  • Water
  • Powdered sugar substitute
  • Lemon juice

Optional topping: sugar free chocolate chips

INSTRUCTIONS:

Whisk together flour, baking powder, sugar, salt and cinnamon.

Stir in coconut oil and maple syrup. Reserve approximately ¼ cup of the mixture. Pour remaining into a parchment paper lined baking dish.
